Wednesday is our usual slaughter day; Classical music is played in the pen area where the animals are from Tuesday afternoon onwards so that early delivered animals have a soft musical background. The music is played all day on Wednesday and is heard from speakers not only in the animal pens, but also in the processing room, the kill floor and at the Pasture to Plate store on The Drive.

Deep Litter
We had sand in the livestock holding pens as we did not want animals having to stand on concrete, especially in the winter time. However the sand would still be cold and offer very little comfort to stock, especially pigs. Then we learned about Deep Litter; In February of 2010 Jasmin invited Felix to a holiday in the sun on the Big Island of Hawaii. The first 7 days we spent at the Hilo University's agricultural compound where master Cho from Korea taught, among many other useful practices, the production of IMO (Indiginous Micro-organisms) and the advantages of Deep Litter for animal housing. The lectures were translated from Korean to English by several capable translators.
Composting
Today's sustainable waste management is as, or even more important
than production. We believe that what comes from the land
has to go back onto the land. Composting animal waste versus
incineration or land-filling was a priority from the start. The
composting facility was engineered and designed to accommodate the
possible, however unlikely 100 year flood. The BC Ministry of
Agriculture made a very generous contribution towards the
construction costs for the composting facility at Chilcotin Harvest.
Tobi is monitoring the successful composting process. Once the composting process is complete, the material is returned back to the land.
